Keep it somewhere dry and cool, moisture is the main problem. Once you&#039;ve taken a slice, rub some olive oil over the cut. I also kept the first piece that was cut off, and placed that back on, covering the cut to keep it from drying out. But it may be too late for that? 

In terms of how long it keeps - well, I&#039;m not really qualified to advise. People say 6 weeks. I kept mine for the best part of a year and I&#039;m still alive!</description>
